What's not to love about Oprah?? She's funny, relatable, driven, giving and so much more. I admire her. Her latest cookbook, which I was sent a copy to review, Food Health and Happiness -115 on-point recipes for great meals and a better life,is gorgeous! It's a work of art really.

In the cookbook, Oprah weaves in intimate photos, stories and in my opinion some fantastic recipes. The soup section of the book is impressive. Oprah offers fresh, vibrant salad recipes as well as entrée options. Most recipes are simple, yet elegant and well thought out in terms of balance.

This is a really nice cookbook and a great read as well. I see quite a number of recipes with bright flavors I want to make, which I have to say hasn't happened in a while for me when flipping through a cookbook. Check it out, you can see a preview of the book as well.

FAQs

What is the difference between New York cornbread and southern cornbread? ›

While both styles generally use the same ingredients -- cornmeal, flour, eggs, and baking powder -- the variance lies in the flavor and texture. Northern-style cornbread tends to be sweeter, moister, and cake-like compared to its Southern counterpart.

What ingredient keeps cornbread from crumbling? ›

Adding about 1 tablespoon (15 ml) of extra butter or vegetable oil can increase the moistness of your cornbread. You can do this even if your recipe doesn't call for butter or oil. Replace milk or water with creamed corn. If your recipe calls for milk or water, try replacing it with creamed corn.

Why does my homemade cornbread fall apart? ›

The gluten in flour adds durability to your cornbread. Meanwhile, cornmeal is slow to absorb liquids, making your cornbread more inclined to crumble, according to Our Everyday Life.

What does adding an extra egg to cornbread do? ›

The extra egg which is increased protein and binder makes the cornbread denser and heavier in texture.

Why is my cornbread dense and heavy? ›

Why is my cornbread dense? If you overmixed your batter or over-measured your flour, your buttermilk cornbread could turn out dense. Be gentle with your batter and make sure you know how to properly measure flour.

Why do Southerners not put sugar in cornbread? ›

The most common theory is a change in cornmeal itself. Until early in the 20th century, Southern cornmeal was made with sweeter white corn and it was water-ground. When industrial milling came along, that changed. The steel-roller mills used yellow corn that was harvested before it was ripe, so it had less sugar.

Do Southerners add sugar to cornbread? ›

Sugar Is Optional

Whether to include sugar or not in a southern cornbread recipe is an issue for debate. We've included as an option a tablespoon which just intensifies the flavor of the cornmeal; it doesn't make the cornbread sweet. The choice is yours as to whether or not to include it.

Which makes better cornbread white or yellow cornmeal? ›

Southerners, on the other hand, tend to prefer white cornmeal. Many people believe that it is because, in the old South, families used white cornmeal as it more closely resembled “fancy” European wheat flour. In any case, today it remains a main component in traditional Southern buttermilk cornbread.

Should you let cornbread batter rest? ›

Note: We recommend allowing cornbread batter to sit for 10 to 15 minutes before baking, so if you prefer, you can delay heating the oven until you make the batter.

Which cornmeal is best for cornbread? ›

As for the best cornmeal for cornbread, either fine- or medium-grind cornmeal is a great choice. Medium-grind cornmeal will bring slightly more texture and grittiness to the batter, which you may or may not want (it's up to you!). You can use fine or medium cornmeal in these extra corny muffins.

Should you soak cornmeal before making cornbread? ›

Soaking the cornmeal in buttermilk for a few hours, or even overnight, tenderizes the large grains of cornmeal, making the bread more moist and tender. This step is optional, however, and the bread is still delicious without the soaking step.

How loose should cornbread batter be? ›

It didn't stop me from successfully baking a lot of great cornbread, because the consistency of the batter is the best indication of whether the proportions are correct. The batter should be rather loose.

Why is my cornbread gummy in the middle? ›

Overmixing the batter

In your zeal to thoroughly combine wet and dry ingredients, the extra agitation develops the gluten in any flour you use, creating a tough, dense, chewy bread. It might also end up being gummy or crumbly, depending on how long you bake it.

How long should you let cornbread cool? ›

Let the homemade cornbread cool for at least 20 minutes at room temperature before slicing and serving. It'll be tempting to try a slice right away, but trust me, the wait is worth it. After it cools, the cornbread will have a fluffier, more cohesive texture and richer corn flavor.

Why is my cornbread flat and dense? ›

While traditional Southern recipes tend to go heavy on the cornmeal, it seems that when you're using too much cornmeal, there isn't enough gluten to hold the cornbread together. So why go all-in for all cornmeal? Instead, add more flour and less cornmeal, and your cornbread will turn out lighter and less dense.

Is it better to use butter or oil in cornbread? ›

While oil can make cakes and quick breads luxuriously tender, I find the cornbread lacks flavor if butter isn't present. Because butter doesn't make the bread as moist as oil does, I pair it with buttermilk. Buttermilk: Buttermilk makes cakes, muffins, and breads extra moist.

Why is my cornbread stodgy? ›

Without adequate drying time, the cornbread becomes sloppy once it hits the casserole dish and mixes with the broth and eggs. No matter how long you bake soggy dressing, it will never perk up the way it should. It all comes down to advice planning.

How can I thicken my cornbread? ›

If you've added too much milk to your muffin or pancake batter, the best method for thickening it is to add a bit more flour. You can use all-purpose flour or the same type of flour you used in the original recipe. You can also use a bit of cornstarch or a mixture of cornstarch and flour.
